Prunes are known for their laxative effect. Dried prunes are a sweet source of iron and beta-carotene.

- 1 lb. prunes
- 1 large lemon, quartered
- 3 tbsp. maple syrup or brown sugar
Place prunes and lemon quarters in a pot over medium high heat. Add the syrup (or brown sugar) and just enough water to cover the prunes. Bring to a boil. Cover the pot and reduce heat to low. Simmer for 30-35 minutes.
