Papaya Chutney with Mango and Pineapple

  • 2 tbsp pineapple juice
  • 2 cinnamon sticks
  • 2 whole star anise
  • 1 1/2 cup dried papaya
  • 1/2 cup dried mango
  • 1/2 cup dried pineapple
  • 1 vanilla bean, split lengthwise, seeds removed
  • 3 tbsp. chopped fresh mint

In a heavy, medium sized sauce pan, add the vanilla bean, cinnamon sticks and star anise with 1 tbsp. of pineapple juice. Bring to a simmer over medium heat. Add the dried fruits and return to a simmer. Mix in the other tbsp. of juice to moisten the chutney. After simmering the mixture for 5 minutes, remove the vanilla bean, cinnamon sticks and star anise. Place chutney in a bowl and chill in the refrigerator for 3 hours. Mix in chopped mint after chutney is chilled. This chutney can be made up to 1 day ahead. Store in the refrigerator. This chutney makes a fabulous topping for ice cream!
