Boil 1 cup of water and add 1/4 cup cracked wheat. After bringing back to a boil, reduce heat and simmer covered for 30 minutes, stirring occasionally.
Cracked Wheat Salad
Also known as Tabbouleh Salad.
- 1/2 cup cracked wheat
- 1 lemon
- 1 to 2 large bunches of flat leaf parsley, washed and dried
- 1 large bunch of mint, washed and dried
- 2 scallions
- 2 medium tomatoes
- 1/4 cup of extra-virgin olive oil, divided
- 1/2 teaspoon salt
- 1/4 teaspoon ground allspice (optional)
- 1 small cucumber (optional)
A few whole leaves of mint for garnish Soak the cracked wheat in very hot water for 20 minutes prior to starting the salad. Prep the vegetables and herbs while the cracked wheat is soaking. After soaking, drain off any excess water and put in a large bowl. Add 2 tbsp. of olive oil, 1 tbsp. lemon juice and = tsp. salt. Toss to coat the cracked wheat. Add the vegetables and herbs to the bowl and add 2 more tbsp. olive oil, 1 more tbsp. lemon juice and the allspice. Toss to coat. Serve at room temperature with crackers, fresh bread, pita bread chips or cucumber slices.
Kamut grain contains gluten, but many wheat sensitive people eat it without reaction.
Add one cup of rye berries to 4 cups of boiling water, cover, reduce heat, simmer.
